Red Ruby or Mock Pomegranate in Coconut Milk Syrup

Assalamualaikum and hello dear readers,

My favourite dessert whenever I eat at a Thai resto is Red Ruby in Coconut Milk Syrup or in Thai it is called Tab Tim Krob. Today I want to share with you the recipe so that we can also have this lovely dessert at home. The preparation is not too hard. If you can't get the fresh Chinese water chestnut you can use the canned variety.If you can't get tapioca flour, you can substitute the flour with other type of starch flour e.g. potato flour or sago flour.

Here's the recipe:

Red Ruby or Mock Pomegranate in Coconut Milk Syrup

The Ruby
Ingredients:

20 pcs Chinese water chestnut (cubed)
1 cup water
1 tbs red colouring
1 cup tapioca flour
Enough water for boiling
1 litre of ice cold water

Method:
1) Mix the colouring with the water in a bowl
3) Add the water chestnut and let them soak for over 10 minutes or longer.The longer the better coz that will make the chestnut redder.
4) Drain the colored water from the chestnut.
5) Put the flour in a bowl or plastic bag.
6) Coat the chestnut with the flour thoroughly.
7) In a pot boil enough water
8) Put the flour coated water chestnut into the boiling water
9) Boiled for about 10-20 minutes until the water chestnuts float to the surface and the flour coating is cooked
10) Scoop the water chestnut into a bowl containing ice cold water.
11) Scoop the red ruby into a bowl ready for serving.

The Coconut Syrup
Ingredients:

1/2 cup sugar
1/2 cup water
1 tsp rose essence or any other essence you prefer
400 ml coconut milk
1 tsp salt

Method:
1) Boil the sugar and the water to make syrup
2) Let the syrup cool down to warm
3) Add coconut milk and salt to the syrup and boil
4) Keep stirring to prevent oil from forming at the top.
5) Ready to serve

Serving:
1) In a bowl scoop some red ruby
2) Pour some coconut milk over the red ruby
3) Add some ice cubes.

Few days back I had cute visitors brought to my doorstep or rather my flower pots. Aren't they sweet. Hope they will choose to stay with me.

The mother is my cat Abu's sister. Hope she will not move the kittens somewhere else. So my dear friends do try the Red Ruby or Mock Pomegranate in Coconut Milk Syrup, coz I assure you it is an excellent dessert from Thailand.

  14. Looks like a sexy dish. I must be honest, I have never tried pomegranate. It's not even found here in Cebu. But I bet your recipe is a delight. Anything with coconut milk I guess is a winner.

    It is resembling the pomegranate. The taste is good coz the water chestnut is crunchy and the tapioca flour covering it is like jelly :)
