Fried Dry Sambal (Sambal Goreng)

Today's dish was requested by a subscriber Nurul Ain from Singapore who is now studying in Australia. I hope this Eid, she can try to make this dish.The dish is called Fried Dry Sambal (Sambal Goreng). I understand that her feeling of homesickness make her want to cook special dishes from home especially during Eid. So to Nurul Ain happy trying.

This dish is a specialty from the southern state of Malaysia served in wedding celebration or during Eid. Some called it Sambal Goreng Pengantin (Wedding Fried Dry Sambal). It takes awhile to prepare but it's worth it.

Here's the recipe:
1 cup glass noodles (soak in boiling water)
2 big onions (slice into thin rings)
2 fresh red chillies (slice slanting thinly)
2 fresh green chillies (slice slanting thinly)
5 strands long beans (slice slanting thinly)
3 ml coconut milk
1/2 cup tamarind juice
salt and sugar to taste
4 tbs oil

Fried Dry Sambal (Sambal Goreng)

Fry the following until brown:
200 gm meat (cube)
5 pcs chicken gizzards
5 pcs chicken liver
200 gm shrimps
2 pcs potato (cube)
1 fermented soya bean (tempe) (cube)
2 pcs tofu (bean curd) (cube

Chilly paste
Blend the following with half cup of water
10 dried red chillies (boiled)
1 big onion (slice)
3 cloves garlic (slice
1 in ginger (slice)
1 in galanghal (slice)
3 lemon grass (slice)
1 in shrimp paste (belacan)

Fried Dry Sambal (Sambal Goreng)

1) Heat the oil and fry the chilli paste until aromatic and the oil separates.
2) Add the tamarind juice, salt,sugar and coconut milk. Simmer until boiling
3) Add meat,gizzards,liver,shrimps,potatoes, tofu,tempe or fermented soya bean.Stir well and keep simmering until coconut milk is about 90% absorbed.
4) Add glass noodles,long beans, red and green chillies and onions.Stir well for few minutes until dry.
5) Ready to serve.
