Two sweet dishes for Iftar - Sago Pudding & Corn In Sweetened Coconut Milk

Hello everyone,


Assalamualaikum. In view of the coming Ramadhan I am sharing with you two sweet dishes which is great for Iftar(breaking of fast).The first is Sago Pudding and the other is Corn In Sweetened Coconut Milk.They were previously featured in my other blog Tea with Umi.They are both delicious hot or cold and are usually eaten during afternoon tea and as dessert after meal. Enjoy the videos and hope you will try them.

Here's the recipe:

SAGO PUDING(PUDING SAGU)

1.5 cups sago (boil)
2 cups coconut milk (alternatively evaporated milk can be used)
1 tsp salt
1 pandan leaf

SYRUP
2 pieces rock sugar
6 pcs palm sugar (small size)
(alternatively 2 cups brown sugar)
2 cups water
1 tsp salt
1 pandan leaf

Method:
1) Boil sago.Place in mould and let to set.
2) Boill coconut milk with pandan leaf and salt.Let it simmer slowly and boil only once.Set aside
3) Boil rock sugar and palm sugar with 2 cups of water.Boil until it's reduced to 1 cup.
4) Add salt and set aside.
5) Remove the sago from the mould onto a serving dish.
6) Pour coconut milk and syrup over the sago.

CORN IN SWEETENED COCONUT MILK

Here's the recipe:

BUBUR JAGUNG

4 cups fresh corn
8 cups coconut milk
1.5 cups sugar
1/2 cups boiled sago
1 tsp salt
1 pandan leaf

Method:

1) In a pot put in corn,sugar,coconut milk,sago and pandan leaf.
2) Simmer slowly until the coconut milk boils and corn is cooked.
3) Add salt and stir. Ready for serving.

Ramadhan is just around the corner however I am sure most families are already thinking of the coming Eid after the Ramadhan. With the current escalation of food prices there can be little joy in the preparation. I know this may sound a bit cliche but we have to place more emphasis on the spiritual aspect of the celebration rather than the merry making with lots and lots of food and everything-must-be-new mind set.It's time that we take the middle road in Eid preparation with more emphasis on the spiritual aspect of the ibadah of the fasting and Eid itself.

May this Ramadhan brings about the change for the better as the ibadah is intended to.


UPDATE ON DROUGHT SITUATION IN SOMALIA

A child is dying every 6 minutes.There are about 380,000 Somalis in the UN controlled refugee complex of Dabaab with 30,000-40,000 more living on the outskirt of Dabaab.The Kenyan government is opening another camp to receive another 80,000 refugees within 10 days.Elsewhere, 93,000 refugees are sheltered in Mogadishu,Ethiopia with refugees numbering 1,700 arriving daily . The latest report is more than 3.7 million Somalis are affected by the drought.

Unfortunately there is virtually very few relief agencies providing humanitarian assistance inside Somalia itself due to the security situation there.Hopefully, with the lifting of the ban on international aid agencies by the Al-Shabab, help could now be on the way to the worst affected areas of Somalia.

I'd like to express my sympathy to the families of the Utoya Island shooting victims and the Oslo bomb blast.As it stands 7 were killed in the blast and 84 were killed in the shooting.

    I am already imagining it now.

    I agree with you that we should place an emphasis on the spiritual aspect of Ied Ul itr rather than the joy of having lots of food.
