Black Glutinous Rice Sweet Porridge


In this outing I am serving you a humble sweet porridge called Bubur Pulut Hitam (Black Glutinous Rice Sweet Porridge). This sweet porridge is ideal for afternoon tea as well as for Iftar (breaking of fast). There's two type of glutinous rice.The white ones is sticky and widely used. The black ones are less sticky and so is used to make porridge or mixed with the white to make lemang i.e rice cook in bamboo.

Here's the recipe.
Black Glutinous Rice Sweet Porridge(Bubur Pulut Hitam)

2 cups black glutinous rice (soak in water for 2 hrs.)
1 pandan leaf ( for the glutinous rice)
5 cups coconut milk (boil with 1 tsp. salt and 1 pandan leaf)
1 liter water

1 cup white sugar (add more according to taste if you prefer sweeter)
5 pieces palm sugar (substitute with 2 cups brown sugar if palm sugar is unavailable)
1/2 liter water

1) Boil the sugar and palm sugar until all is dissolved)



1) Boil the glutinous rice with 1 liter water until the rice soften.
2) Add in the syrup and pandan leaf. Bring to boil and remove from stove.
3) Serving suggestion:
Pour over the porridge the cooked coconut milk.



Ramadhan is so near..just a few days more.Time like this I miss my dear departed very much. My late mum and brother. Hasn't been the same without them.AlFatihah.

  3. Assalamulaikum Umi... it seems suitable dish for break-fasting.... My late mum departed 18 years ago, a week before ramadhan. Kakak still single on that moment. Al-Fatihah for all of them...

  7. I believe we have something that looks similar back home. We call the porridge "champorado." Instead of syrup and pandan, we melt cacao and mix it in the rice.
