
Dear Readers,
Assalamualaikum and hello. I am sharing with you today a salad dish from Thailand called Mango Salad or Kerabu Mangga in Bahasa Malaysia. I hope you will try this fabulous salad.

MANGO SALAD(KERABU MANGGA)
Ingredients:
2 mango (I used 1 ripe and 1 young mango. Slice thinly)
1 stalk coriander leaf
1/2 cup roasted peanuts (grind/pound coarsely)
1/2 cup roasted dried shrimps (grind finely)
2 tbs roasted dried shrimps
2 torch ginger (bunga kantan)(slice thinly)
3 shallots (slice thinly)
2 lemon grass slice thinly
3 red Thai chilly (slice thinly)
3 green Thai chilly (slice thinly)
2 tbs syrup
lime juice from 2 lime
2 tbs fish sauce

Method:
1) In a mixing bowl mix all ingredients.
Garnish with peanuts and pounded dried shrimps. Serve.
Note: the quantity of nampla or fish sauce,lime juice and syrup are adjustable according to your taste. Similarly the chillies can be reduced or added as per your preference.

WHO LET THE CHICKEN OUT

Today as I prepare the dishes for the pre-dawn meal, I remember how wonderful it was to welcome Ramadhan in the village back when I was a teenager. Mum always wanted to cook Chicken Rendang for the first night of Ramadhan. That was not the problem. Catching the chicken was. Early morning saw me and my bro running around trying to catch the chicken. Bro was not catching, he was shooing the chicken farther and farther coz he loved his chicken. To him they were pets. Problem solved when mum came out and bro had to behave.
And he would be gone all day after that sulking. He wouldn't eat the Rendang either. Hahaha..we were quite happy to have his share. Those were the days..very happy carefree days.
A friend who is now residing in Netherland, Mr. August T informed me that last nite he had tried cooking one of my dishes here called Petai Berlada for a gathering of friends. Turned out well and they had enjoyed the dish. I am so glad to know that. The recipes here are for sharing and sharing is caring. He has sent a snapshot of the dish that he cooked.He is a good cook ya.

I really love Mango Salad,it's one of my favorite.
I can imagine you and your brother chasing chicken when you were a teenager. I am sure it was really fun back then.
And the Rendang Ayam (Chicken Rendang), hmmm ..
Last but not least the Petai Belada ...
